I have a British palate, running towards dry sherries, blended pot still whiskeys, Spanish Brandies as well as Cognacs and Armagniacs, Bordeauxs and similar gentle, fruited but not fruitey reds, a good Chianti Classico and other North Italian reds with dinner instead of the more raw Burgundies, and a nice glass of Rheingau with fish.
